@ Raisin Rack.

Sometimes at celiac conferences
These flours are "cup for cup" replacement flours. No need to add gums or
mix the flour. So  you can use your own recipes.
Jules offers a cookbook and website with recipes. Her flour has expandex in
it which keeps baked goods fresher longer.

Domata Living Flour is sold in bulk commercially for GF baking/cooking.
They have 3 distinct mixes: pizza flour, seasoned flour and all purpose flour.
The pizza flour mixes easily--just add water-- and is used by many GF pizza
parlors. Seasoned flour is used for breading meat, & all purpose for baking.
Go to website(click above) for recipes.

Mr. Ritts works well for most baked goods. A lot like Betty Hagman's mix.
Not recommended for yeast risen breads.

King Arthur and Better Batter are making news too.
