I dined this past Saturday at 3 Palms Pizzeria in Hudson, at First & Main. I had their gluten free pizza and it was incredible. While it is not a dedicated kitchen nor do they have a specific gluten free menu, they do make their own crust in house. There was a $3 upcharge for the GF crust. Obviously a concern given that there are other flours, but I spoke with the manager who said that all pans were separate and they take precaution. I was fine and didn’t get sick at all. It was by far the best crust I have ever eaten out. They also have gluten free desserts in the case, and my mother in law had purchased a decadent chocolate cake for my birthday from there over the summer.

Lunch at the new 3 Palms was really good. Invited to dine with a friend there and not knowing anything about the restaurant I had no expectations.
The salad I chose was the Chopped Italian – if I recall – there are two g-f salad options and this looked inviting. It was really quite incredible and the small was perfect for a starter. My dining companion and I shared the beans and greens dish was also super tasty and g-f. I chose a pizza mostly so I could test it out and bring the rest home for a later meal. I don’t recall the name of the pizza I chose ( and I’m not seeing it on the webpage list ) but suffice it to say, it was loaded with prosciutto, it was quite good.
When exiting the restaurant I noted that the bakery case had quite a selection of g-f items. I was disappointed to see the g-f items in the case with the traditional baked goods. That’s pretty much a no-no in my book but this is not a dedicated kitchen establishment so the risk of dining here or consuming anything is assumed by the guest at every level.

Gluten free pizza returns to CPK. You may remember their 2011 GF pizza that wasn’t gluten free. This new version has a GIG certification.
“These gluten-free pizzas are prepared using the strict procedures approved by The Gluten Intolerance Group (GIG), using a certified gluten-free crust and other ingredients verified by our suppliers as gluten-free. Please inform a manager of any allergies or special dietary needs (e.g. gluten intolerance) before ordering.”
“Any of our pizzas may be made on a gluten-free crust for an additional $2.00, but due to our current kitchen space, only the pizzas listed above can be prepared using GIG’s certified procedures. Please note that normal kitchen operations involve shared cooking and preparation areas and guests should consider individual dietary needs when ordering.”
The listed pizzas are The Original BBQ Chicken, Pepperoni, Mushroom Pepperoni Sausage, or Margherita.
So, how is the pizza? I recently tried the BBQ Chicken and was disappointed. The crust was very thin with a rubbery texture, only crisp on the crust edge. The toppings had nicely cooked but flavorless chicken with an overpoweringly sweet BBQ sauce.
I won’t hurry back to California Pizza Kitchen. But, it is nice to know that safe GF food is available while traveling, as CPK has more than 250 locations in more than 30 states and 11 countries.
