- We use Bona Dea gluten free bread mix.
- We have GF exclusive knives for cutting bread.
- All surfaces, mixing bowls, and utensils are washed and sanitized before use.
- Regular bread and GF bread are not made at the same time.
- All prep surfaces are washed and sanitized,hands washed and gloves changed when a GF order comes back to the kitchen.
- Our system prompts that it is GF to change gloves.
- We have also trained our employees to follow all GF protocol and what items we have that are not GF friendly.
- If there are GF and regular subs in the same order they are bagged separately and the GF bag labeled.
- Our turkey and meatballs are not GF due to binding agent but all other meats and sauces are gluten free.
- We also carry GF chips and beer.
